hot and humid!

It was hot and humid today, but kind of nice that it actually feels like summer after all the cold and rainy days we’ve had.

I woke up late and had to pack my breakfast to go to eat at work. I put together 2/3c plain yogurt with blueberries, walnuts and a drizzle of honey. It was delicious!

After eating my breakfast I had to have a cup of coffee before waking up and getting to work. I was good until lunch when I had a homemade black bean burger on 1/2 a wheat tortilla with avocado and salsa and a peach on the side.

I got the recipe from the betty crocker cookbook, it’s mostly pureed black beans and chilis with some egg white to bind it all together. The chilis add a great kick!

3:30 is my snacktime – Today I had an apple and some all natural peanut butter (Smuckers is my favorite).

The peanut butter has the right mix of protein and good fats to keep me satisfied until dinnertime. If I don’t eat something before going home, I’ll be tempted to graze until dinner is ready (especialy when my husband has Cheeze-it’s in the house, I am weak when it comes to cheese!!!)

I got home from work and let the puppy out. I had a meeting tonight so I thre together a quick dinner of quinoa topped with diced tomatos, spinach and tofu cooked with balsamic vinegar. My serving of tofu was pretty small – I went into the other room to check the nutrition facts on the quinoa and my puppy ate a couple of pieces! She seems to be ok, I’m sure a little soy won’t hurt her 😉

I still have some points left and will probbly hve a small snack soon. I’m feeling pretty good. I have had pretty decent eating habits for the past 6 or 7 years, but last week got serious about limiting my not-so-good foods and watching my portions. So far it seems to be working, I’ve lost about 5 pounds (which I know is mostly water weight) but it’s exciting none the less.

off to a decent start

I have an on again off again relationship with oatmeal. I want to like it. I know it’s super nutritious, but I just can’t get used to the texture. This morning I tried once again with 1/2 cup of oats made cooked with milk and vanilla. After cooking I mixed in fresh peaches and walnuts. It LOOKS delicious and the peaches were great… I just can’t make myself love the cooked oats!

My husband and I were out running errands and I had the munchies. Soyjoy bars were on sale at Target and I thought I would give one a try – I bought the mango coconut flavor. I’ve heard mixed reviews on these bars and wanted to try them for myself.

My opinion – not so good. The tropical flavor wasn’t bad, but the bar itself was pretty dry and almost burnt on the bottom. I don’t usually buy things like this, but sometimes I have to see what all the fuss is about.

For lunch my husband made tuna salad (chunk white tuna in water and light mayo made with olive oil). I had mine in a whole wheat tortilla with fresh-from-the-garden lettuce and tomato.

This afternoon was spent cleaning the house, it’s humid up here in NH today and I was kind of tired afterwards. Vacuuming and cleaning bathrooms can be hard work 😉 When I was done, I had one of my favorite snacks, whole grain WASA crackers with hummus. Yummy!

For dinner I threw together a potato chicken skillet with a small red potato, boneless chicken breast, onions and squash.

I am a big fan of dinners made with only one pot or pan.

Later on in the evening I whipped myself up a smoothie. I just got back from visiting one of my college roomates in North Carolina and she got me on a smoothie kick!

This one was made with pineapple sherbet (I know – not whole! but I have it in my freezer and it is soooo good. When it’s gone I plan on making something to replace it myself… any suggestions?) It was also mixed with frozen strawberries and light vanilla soy milk. It was very good, the soy milk gives it a creamy texture and the pineapple gives it a little tartness.

Back to work tomorrow. My lunch is already packed and I’m sure I’ll be planning breakfast in my head before I go to sleep.

First post!

Hello and welcome to my new blog! I’m one of those girls who has spent a good portion of her life trying to lose weight, While that’s still one of my goals I have recently become more focused on getting healthy and really focusing on what I put in my body (I guess I’m getting old!) I’ve become fascinated in the whole foods movemeFirst post!nt and thought a blog was a perfect way to track my progress and share my learning.

My husband and I recently bought our first home and actually have a great garden space out back! We’re getting a pretty good crop this year and I love having really fresh produce. Living in New Hampshire makes for a short growing season and I can’t wait to really start gardening next summer. I have also become interested in making as much of my own foods as possible. I like to know exactly what I am (and more importantly am NOT) eating. I plan to shre that adventure here too.

My husband is a chef so it can be difficult sometimes, but we do share a lot of the same ideas on the quality of food we eat. Also because he works most nights, it’s easy for me to eat what I want.

Thanks for sharing this journey with me – I hope to inspire others to think about the foods they eat as well.
